Blog

Sorry for the slacking on my blog lately.  I have been crazy busy.  Something has to be put on the back burner - apparently my blog and my house work are those things!!  We are starting a Little League in my town and I'm on the board so we are working a lot to get everything going for the kids!!  So far it has been a great experience and I'm glad I have done it.  Some of my other volunterring is heading toward the end for this school year so that should help free up some time.  I'm still doing my weight watchers but haven't been tracking as well as I was and you can really tell - the pounds are not falling off as fast.  I'm hoping this week is my turn around week and I get back on track!!  I'm still down 17 lbs - but I still have over 40 to go!!

Fixing Toms

Maelynn got Toms before Christmas and wore them out in the toes in about 2 weeks.  The rest of the shoes look brand new!  The wood chips at school are killer on the shoes!!  I told her she couldn't wear them to school anymore - but she hadn't been wearing them at all since they are all tore up.  I found on http://www.pinterest.com/ how to fix them.  So I let Maelynn pick out the material and then I glued it on with some fabric glue.  It was a lot of work - but she loves them and we can get some more use out of her Toms.

Taco Muffins - 3 Pts each

My Sister made these for us - and they were really yummy and good on my weight watchers points.  Beclynn really loved them - she is my taco child - she can't get enough tacos!!

Ingredients:
1 lb ground beef
1 packet taco seasoning
2/3 cup water
1 can black beans, drained
2 cups cheddar cheese, shredded
36 wonton wrappers
your favorite taco toppings - salsa, cheese, sour cream, lettuce, tomatoes, etc
cooking spray

Preheat oven to 375.

Brown the meat in a skillet and drain off fat (I use a collander). Return the meat to the skillet; add the taco seasoning, water and black beans.  Mix and simmer for 5-10 minutes, until water is absorbed.

Spray 18 regular muffin pan cups with cooking spray.  Place one wonton wrapper in each muffin cup.  Divide half of the taco meat between muffin cups.  Sprinkle half of the cheese over the cupcakes.  Repeat layers - wonton, taco meat and cheese.  Bake at 375 for 20 minutes, or until cheese is bubbly.  Top with your favorite taco toppings. 2Pts - but I added FF Sour cream and avocado - which added another point.

BabyCakes Apple Cider Donut Holes - 1 pt each

My Mom got my sister and I the Babycakes cake pop maker for Christmas.  I have used it for cake pops and tried it out this morning for donuts.  Since donuts aren't great on my Weight Watcher points - this is a great alternative because it bakes them.  They are 1 pt each - but it helps get over my donut craving with out going to crazy.


Ingredients:

1 1/4 cups all-purpose flour
1/2 cup Sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 cup vegetable oil
1 egg
1/2 cup apple cider vinegar

Cinnamon-Sugar Topping
1/2 cup sugar
1 teaspoon cinnamon

Directions:
combine flour, sugar, baking powder, salt and cinnamon in a mixing bowl.
add vegetable oil, egg, and apple cider and stir until well blended
Fill each cooking reservoir with 1 tablespoon of batter
Bake 4-5 minutes
Immediately toss hot donut holes in the sugar cinnamon topping

Makes 3 dozen - each 1 pt

Home Made Valentine's

This year we decided to make our Valentine's our self instead of buying some at the store and filling them out.  I still spent about the same, but feel like these are way more personal and so cute!!  Maelynn's Valentine party at school is a Princess & Frog theme - so she wore her princess dress - and of course Beclynn wanted to dress up too - so she is wearing her Tangled out fit from Halloween.  I think they turned out cute!!

Weight Watchers Crab Rangoon

Ingredients:

8 oz cooked crabmeat, packaged or imitation crabmeat (I used fat free imitation - already shredded)
8 Tbsp fat-free cream cheese, room temperature
1 tsp steak sauce
1 clove (medium) garlic - minced
24 items wonton wrappers (3 1/2 inch square)  They were out so I used egg roll wrappers and cut them in half.  That is why mine are square instead of triangles.

Directions:

Preheat the oven to 375 degrees.  Spray a nonstick baking sheet with nonstick spray

Combine crabmeat, cream cheese, steak sauce, and garlic in a bowl until blended.

Place 1 tablespoon of crab mixture in the center of each wrapper and brush edges with water and press edges to seal.

Spray wonton lightly with nonstick spray

Bake until wontons are golden and crisp about 20 minutes

Yields 2 Pieces per serving - so 1 point per crab rangoon!!

Turkey Sausage, Cabbage and Tomatoes

Ingredients:
Turkey Sausage (16 oz package)
Head of Cabbage (cut into large sections)
Can Diced Tomatoes

Directions:

Cook Turkey
Add Diced Tomatoes
Add Cabbage to Top
Add Lid to Pot

Add Season about half way through and stir cabbage into tomatoes and sausage.  Add Seasoning again at the end.  I used sea salt, and Italian seasoning salt.  I like to do Cajun seasons too - for a little kick.

Cook until Cabbage is is completed cooked.

Total Pot is 12 points!!
